Source for good quality andouille sausage
I'm unable to find an authentic andouille sausage with any regularity here in Madison. Woodman's, of all places, was carrying a brand that was actually made in Louisiana, and was the real deal. But no more. I can only occasionally find some at Metcalfe's, but it's been some months. I was there last week and they had one brand that looked promising, until I saw potatoes listed as an ingredient. Fail...

You can call Jenny Street Market. I recall seeing it there before. There is also Knoche’s, but I don't know if they have it.
When I first saw the title, I was going to recommend Woodman's. They seem to have a really good sausage selection. The only place that carries Kielbasa un-smoked year round.

Jacobson's has their own andouille. No potato listed in the ingredients. I get mine at their University Ave. location inside of Brennan's.

Last time I asked for it from Knoche's, they said yes and went in to the freezer in back and came out with a bag marked "Sysco."

I know they make their own brats, but not andouille...

I've tried it. It's not too bad, but the meat is ground too fine. Real andouille should have chunks in it. I've used it when I can't find anything else.
The Jacobson's smoked polish is real good. I buy that all the time.

Doesn't Bavaria Sausage carry fresh kielbasa year round, too?
I've never tried their andouille, but have heard good things about the place.
All else fails, call up Liliana's and ask the chef.

Try Conscious Carnivore in that little strip mall by Shorewood that has a Penzey's. I put some in Jambalaya and it was good but that's not the same as trying it on its own. Maybe call first as their offerings vary.

I guess the Usinger brand andouille at Woodman's isn't what you're looking for. Maybe not the most authentic but at least it's local. Works for me when I feel like sausage and chicken in my jambalaya. But I admit I'm no an-doo-lee con-a-sewer.

Bump. Did anyone figure out a good source for andouille? Or any creole/cajun meat products like tasso, boudin, smoked pork hock, picked pork butt, etc and etc.
