I am looking for Vegas specifically, but would appreciate any good site recommendations.

Then again, it's Vegas. Shop around, try multiple methods. Have you been there before? Do you know why you're going (convention, family-style recreation, all-out debauchery, etc)? It affects how you do what you do.

I've noticed that even the websites for motel chains like Days Inn, Ramada, Doubletree, etc tend to offer slightly lower rates when booking over then internet rather than calling ahead or showing up to book a room. Just last month I checked ahead for a Days Inn and the internet rate was $10 buck cheaper than the rate I got at the desk. I didn't book ahead via the internet because I wasn't sure I was going to stay at that hotel, but when I asked why the internet rate was cheaper five days ago, when it was obvious the hotel was not booked up that night I checked in they just told me it's their 'internet rate'.

I have used Priceline and the Name Your Own Price Feature... if you have some flexibilty in when and where and quality of hotel, it can be a damn good site.
I have stayed in the Buckhead area of Atlanta in a "Suites" hotel for 29.00 a night for five nights...

Also used it for airlines before too, really it all depends on how flexible you can be

Some years ago when my buddy and I went to Vegas, we got a deal through the Golden Nugget for 2 nights, round trip flight and room included and $50 of food "comp'd" (it was a coupon) for $600 for both of us. I had to drive to MN to meet him and fly out, but it was worth it.

Only spending $300 on food and lodging means more money for gambling.

We used only $30 of the coupon for food, and survived the whole time on free packs of Camel Lights and free booze. I lost $400 in the casinos, and a slightly higher dollar amount in the -errr, nightclubs.
