Guacamole Recipes

Postby Bwis53 » Fri Aug 12, 2016 10:48 pm

I was surprised at the variations online. I like mine with avocado, tomato, onion, garlic and no cilantro, no hot peppers,no lime. I enjoy the garlic quac from Whole Foods. Gotta good recipe? (I prefer savory to hot.)

Here's a nice guac recipe:
Cilantro-Lime Guacamole. The jalapeño gives it a nice high note — just be sure to mince it finely. I think the ground coriander is optional, but don't skip the cumin.

That recipe looks just about perfect.

Are we really okay with spelling it with a Q now?

Needless to say, I'm ok with it.

And yes, I'm also ok with spelling okay as "ok" too.

onion & garlic may be fine if one is mixing up a chemical weapon . . . i finally settled on mixing in 65 per cent lemon and 35 per cent lime juice, and using coriander and celery salt in addition to both black and white pepper and and putting the jalapeño peppers on the side . . . poppy seed being more of a political statement than anything else . . . and if u drop some on the ground outside, u may have a spot of god's own medicine in about 80-135 days . . . the differences betwixt using a fork, a masher, a specialised tool, and various settings on a blender on the avacado are more subtle than one may expect . . . there are some advocates of paprika . . .

once i was given a communiqué from a chapter of m e ch a and noticed that in the text that the name of the central constituency of the organisation was spelled "xican@" . . . "ah yes, i see the point, are u folks going to change the name of the organisation to m e x a?", i asked . . . "well, that may be more trouble than it's worth . . ." came the answer, this being 20 or more years after said organisation was founded . . . sort of like swapo, i guess . . .

Guacamole is avocado with lime or lemon with a pinch of chili pepper. In my opinion guacamole should be a compliment to my salsa not compete with it.

Tonight I made a guac that pleases me. I fork smashed one avocado, fine diced vidalia onion slice, medium garlic clove minced, 2 campari tomatoes diced (leave in juice and seeds), spice to taste with Nature's Seasoning. I was satisfied. Next time I'll try adding some fresh chive. It may not be a traditional guacamole but I like it.

Pretty much every time I got to work with different Mexican chefs, they always used lemons versus limes in recipes I would have assumed the opposite.Salsa recipes especially. I think for you wanting savory, the more simple the better. Salt, pepper, lemon juice, garlic & onion powders, cilantro. Done.

Unless this is some kind of Jetson's reference, I'm afraid to ask what that is.

I'm trying to think ... onion powder, tomato powder, meat powder ... I dunno. Lemon powder??
