I'm not joking when I say my uncle bob cooked one of the best turkeys I've had. He injected it with mesquite marinade and then deep fried it. Talk about moist with crispy skin!

I use a digital thermometer to tell when my bird is done.

This works extremely well for a smaller turkey, say about 10-15 pounds. Once you have the larger birds it's harder to find a container to marinate in.

Cornbread stuffing is sort of a Southern thing but still very good:

If you go to Foodnetwork.com and put in their Search box the word STUFFING you'll find a whole lot of, well, stuffing. All of it good!

I like the canned stuff too, but making your own is so easy, I just usually go that route. (Not the strained type - the kind that leaves the berries mixed in)

Also - YAY for Diet Cranberry Juice being available. You have to pick through all the absurd combined juices (Cran-Potato!), but it is there.

In regards to the leftovers - there are some creative ideas out there, but we usually are lazy and go with turkey on a shingle with potato patties, and soup a couple days later.
