Had a catered lunch from Underground Butcher at an event today. The coppa sandwich was so perfect. It was simple: sourdough baguette that didn't hurt the mouth to eat, thin slices of coppa, and generous slices of Pleasant Ridge Reserve with a spicy dijon mustard. No one flavor overpowered the others...it was all so balanced.
I usually dislike sandwiches (thanks to crappy grocery store delis and Oscar Mayer), but this reminded me of why a simple Italian meat and cheese sandwich is still one of the best things in the world to eat. Craving some Gino's and Frabonis now to compare. It's been a long time, but I don't recall liking them quite as much as the Underground's coppa (though Gino's and Frabonis are cheaper, I'm sure).
Where are you eating and what do you think? What's opening, closing, succeeding, failing?
