Those are authentic Chinese dishes. You may not like them. A lot of things are authentic Chinese that you might not like. Pig intestines, for example. I generally draw the line at duck feet.
Ground is not authentic, although popular in almost all Chinese restaurants in the US. I have ordered sweet/sour duck and pork both in Hong Kong. They do not bread or grind either. Duck soup is also popular in Hong Kong.
